Sensory profile Were it not the colour of a wine, it would surely be that of a style accessory. Energetic and captivating in its brilliance, this luminous golden ochre recalls the living harmony that dances between oak and honey. Just as it does on the nose. While tentative at first, its slow development is rhythmically elegant. Notes of sandalwood, acacia flower and sugared almonds are supplemeted by a persistent and enveloping breath of ripe fruit, dried apricot, quince and sultanas. Lightly honeyed, its ever lengthening flow of aromas awaken to a salivating sensation of nougat and almond. On the palate, harmony ebbs and sways between the wines more delicate mineral, fruit flavours and those more toasted, pleasantly bitter, nuances. Sweet and lively, as if created with freshly picked fruits, the body is supple and engaging.
Pairings A classic pairing with dry pastries, why not also think of the more adventurous encounter with the sweet & savoury character of salt cured 'Prosciutto di San Daniele', cold cuts & charcuterie, medium-aged cheeses and herb & raisin tortelli from Carnia.
