Sensory profile Generously, it comes to meet you, anticipating your intention to bring it close. Its visible depths preparing you for an enticingly spiced olfactory affair. In the glass's crystal frame, the horizon glimmers in amethyst violet and ruby light, bleeding into spirals of rose-tinted viscosity when orbitally spun. A sincere expression of its wild origin, it spiritedly charms with luscious blueberry, blackcurrant, blackberry, cherry and plum. Enriched by the ebb & flow of vegetal and spiced meanderings, it ferries the nose from tobacco to sandalwood to woodland and eucalyptus to pink and black pepper, to coriander, clove and licorice root. Sublimely charismatic, rustic and mountainous, it evokes a place that has been purified by the essence of scented woods, a place warmed by the inexhaustible fire of lifes living fruit. On the palate, it ignites its own sense of pure nectar. This 'recall of its youthful must' happens due to the rich presence of salts, acids and natural sugars that as yet remain uncorrupted by the alcohol, running as they do all the way up to the mid palate. With each successive sip, the complex texture of its flavours are revealed, delighted by the silken touch of its sweet tannins and expanded by each aromatic swirl that sparks with the imaginary spirits of grape brandies and herbal infusions.
Pairings More than reviving its physiologically wild synergy with gamey meats and side dishes of earthy fruits such as potatoes, mushrooms, red beets and jerusalem artichoke, this venerable Schioppettino will pair equally well with many 'aged fresh' and soft rind cheeses, not to mention appetizers and main courses based on vegetables and grilled 'lightly spiced' meats.
