Sensory profile Presaging its full body and intensity, the wine boasts an appearance of sun-ripe hay shot through with yellow-topaz. A first whiff reveals just-picked pear, apple, and apricot, where nectarine predominates, flanked by juicy yellow plum and wild pear. Heady, dense aromas slowly evolve into smoother, smoky-edged hints of rennet apple and cinnamon. The entry is classic Ribolla Gialla: tangy and crisp, with a clean, fresh minerality. Before reaching its heady, warmly-alcoholic mid-palate, the taster is uplifted by ultra-succulent apple and pear that both slake and stimulate the taste buds. Overall, it presents a succession of discrete sensory expressions, with supremely self-confident fruit eventually yielding to a clean, slightly bitterish finish.


Pairings The quintessential property of this varietal is to refresh and clean the palate when enjoying dishes that are fat-rich, sweet, and savoury, an ability that is perfectly embodied in this Rodaro 2018. Thus, it will be a superb complement to the entire range of antipasti, battered in particular, and with crudités. Its encounter with fish is sublime.
