Sensory profile A deep, intense hue greets the eye, shot through with generous dark garnet, enriched by ruby-red highlights and heightened in its impact by its significant viscosity. Essences of spice are foregrounded on the nose, which meld into dense-packed impressions of ripe and semi- dried fruit. This complex is soon energized by a complex of toasty oak, cocoa powder, liquorice root, and subtle roast espresso bean, creating a dynamic, aromatic current that soon gives rise to notes of ripe cherry, fig marmalade, dried plum, and an array of liqueur wild berries. This bouquet, dense, rich, and vibrant, seems endless, introducing in its turn a palate of nonpareil intensity. An enfolding, natural acidity, felt immediate upon entry, drives the progression, its thrusting, pulpy tactility almost anesthetizing the sensory apparatus as far as the mid-palate. From that all-embracing harmony emerges the sweetness of dried fruit, the austerity of liqueur berries, and the earthy minerality of the vegetal component of the terroir. Its all-but-endless finish is marked by reappearing impressions of sweet-bitterish spices that gently waft away but leave behind the memory of an intense, regal, harmonious wine!

Pairings Thanks to the incredible persistence of this wine, it will be perfect with spicy sausages, game, but also with tasty international dishes.
