Sensory profile Luminous and resplendent, its very appearance bespeaks richness and nobility, with delicately coppery highlights adding to the aristocratic austerity of its saturated gold-yellow. The nose too is classic and refined, its dense train of fragrances regally proceeding through notes of well-ripened apple and pear, hazelnut, walnut and almond, to reveal impressions of biscuits, mountain pastry filled with raisin, prune, and pine-nuts, alluring hints of vanilla and cinnamon, and heady notes of fruit-infused aquavit. The palate, tangy, full, and rich, is cossetted by an impressive complement of finely-balanced fruit that rides high in the mouth, offering a delicious serving of preserves, testifying to the vine-ripened grapes. The finish—sweet and bitterish, both dry and clean--gathers together all the components into a concluding, vibrant harmony.
Pairings In addition to the classic pairing with fried and battered dishes, and with grilled fish, this Pinot Grigio will provide intriguing synergies with an ultra-creamy, wild-herb risotto, medium-aged cheeses, and with an infinite number of vegetable- or cheese-filled pastas.
