Sensory profile This wine opens to a deep, garnet-rimmed ruby red, its density and vibrancy visual evidence of perfectly ripe fruit and its still-youthful evolution. A near-explosive bouquet, velvet smooth and laden with spice, parades both ultra-fresh and semi-dried grapes in a simultaneous duet with seductive tropical nuances, liqueur cherries, dried plum, and fig, alongside pungent coriander, nutmeg, clove, and green pepper, to list just the more prominent. Slower to emerge are even more enfolding notes of vanilla, cocoa powder, and caramel, which combine to infuse the mid-bouquet with a lilting, lingering impression of Sherry. The wine enters rich and complex, immediately radiating delicious impressions of just-harvested fruit, then expands to fill the mouth with vibrant impressions of ripeness and toasty oak. Full-bodied and impressively lengthy, it is the embodiment of power, life-force, and a taut austerity. A dry, toasty finish will delight serious wine-lovers who prize such a cornucopia of impressions.
Pairings In addition to the classic pairing with cheeses and pork, this wine’s distinctive nose and palate make it the ideal partner with roast and baked meats, as well as those with succulent, full-flavoured stuffings.
