Sensory profile The wine in the glass is immediately seductive, with its appealing, sparkling straw-yellow hue and initial draught of spices and crisp, just-picked tropical fruit, with a cornucopia of grapefruit, kiwi, pineapple, and lychee, lifted by pungent notes of pink pepper, coriander, and nutmeg. A lingering enjoyment of these essences is at length rewarded by the enfolding emergence of warmer components, particularly pipe tobacco, sandalwood, incense, and ripe bell pepper. Nor is the evolution yet complete, since the wine then offers up luscious impressions of candied pear and other fruit, cinnamon, clove, plus hints of star anise. Its rich, aromatic generosity can transfix us, until finally, with a first sip, we expose ourselves to its energy-laden palate. The forceful and incisive minerality of its initial impact finds its magisterial foil in a complex of well-ripened fruit, alcoholic warmth, and a breadth and depth remarkable for this variety, all of which extend the palate’s tactile embrace into a cleanly-delineated finish that is crisp and dry, and with a classic bitter-almond sign-off.
Pairings Its generous aromatics, impressive weight in the mouth, and long-lingering finish make this wine the perfect partner to fish dishes, salads and goat cheese.
