Sensory profile Of noble origin and born to impress, a vibrant seam of amethyst lies almost hidden in its impenetrable ruby depths. Reluctant, perhaps protective of its edgy muscular disposition, it slowly reveals its essence one perceptive frame at a time - leather, crushed macerated olives, cigar and plum distillate suffused with subtle veins of licorice root and fern-like fronds, elegantly cascading on a tapestry of sweet toasted emotions. Slow-beating and suave on the palate, its aromatic heart finally opening in alternating streams of syrups and liqueurs - black cherry, brandy, almonds, red cherry and raspberry. One imagines this Cabernet well beyond its immediate outpouring, as its dense fortified notes broaden their advance, soothing the palate with refined fluidity. Elevated by an essential tide of spirited fruit and earthy mineral textured preserves, in the instant before you swallow, a wave of succulent ripe tannins swell to carry you and the persistent almond and dried plum finish to an almost limitless end.
Pairings A meditative wine of this there is no doubt. Grilled meats will easily pair.
