Sensory profile Immediately upon its entry into the glass, one’s gaze is compellingly attracted by the sheer depth of the wine’s tonality: a dense purple enframes the sanguine, unplumbable depth of an impenetrable liquid, while vibrant shimmerings of intense ruby snake upwards, tenaciously remaining alive: impressive premises for those looking for parallel sensory expressions. The bouquet enfolds with multifaceted rapidity, releasing fruit that is fresh and ripe, dried, and syrupped, ranging through cherries, plums, strawberries and raspberries, and into more liquorous notes of wild blueberry. Complementing the fruit component is a vibrant vein of aroma-rich spices, including tobacco leaf, cinnamon, clove, and pink pepper, while an alcoholic warmth wafts sinuously upwards incomparable impressions of cocoa powder, vanilla, toasted almonds, and cherry brandy, in an overall dynamic that is equal parts decisive and nonchalant, ceaselessly delighting and harmonising. Spice-laden impressions drive the entry, conveyed by a velvety alcohol that unexpectedly fills the palate and leads into a dense charge of mineral cum tannin pleasure, until, in mid-palate, this liquorosity evaporates to unveil aromatic essences and allow the flavour components to flow towards a near-endless, pleasantly bitterish finish.


Pairings This Cabernet will be at the top of its form with elaborate protein-rich dishes, with a preference for meat and sweetness and tending to fat; aged cheeses come to mind, as does stewed game. It also loves strongly flavoured and spicy preparations.
