Méthode Champenoise – Rodaro is Pas Dosé

Paolo loves France and has great respect for its winemaking masters. It is key to understand how one interprets a vision, a wish, a gift. Paolo’s dream came to life in 2004 when he began creating his Pinot Noir terraced vineyards on the prized eocenic hills of marl and sandstone that rise above the winery. It’s this special combination of soil and bedrock that gives our grapes their typical mineral signature.
Paolo has dedicated his ‘all’ to this project, limiting yields per hectare and using only the noblest part of the pressing to interpret his vision in what is a classic champenoise style. The harvest in the early hours of the morning, the fermentation and maturation in steel, are just the beginning of the journey. The 2011 vintage saw the first limited production of our rosè with its brilliant coppered “onion peel” hue. It was called Millesimato Rosé Pas Dosé (Zero Dosage). Today we know it as Rosé Nature.
Elsewhere in the vineyard, Pinot Bianco and Chardonnay have become the inspiration for our Blanc de Blancs, with its alluring balance, elegance and freshness.
In 2016, we released Paolo’s most recent creation: Brut Nature Rodaro (Blanc de Blancs).
With its fresh crisp bite, this more youthful style is released following 24 months resting on its lees. Displaying a mineral-rich vein, something which distinguishes all Rodaro wines, each quality sip invites another, making this an ideal sparkling aperitif to share among friends.
The RODARO Rosé Nature is characterized by a fine and elegant perlage.
Strawberries and cream on the nose, echo again on a beautifully structured, crisp and complex palate. Our Rosé Nature Millesimato 2014 Pas Dosé, produced exclusively using 100% Pinot Noir grapes, and now aged on its bottle lees for 32 months, is now available from the cellar.
